A cake full of flavors and simple to prepare. Accompanied by a tea or a hot milk it is excellent for these winter days.

2 eggs
180 g of sugar
100 g of peeled carrots
180 g of flour 00
50 g of cornflour
juice of half an orange
grated zest of 1 orange
16g of baking powder
4 tablespoons of double cream or 2 tablespoons of vanilla yogurt
70 g of sunflower oil


Peel and cut the carrots into small pieces and blend them for few seconds then add the orange juice and blend together until you get a puree. Put aside.

In a large bowl beat the eggs with the sugar until they are light and fluffy, then add the oil, double cream ( or yogurt ) and orange zest. Sift and Incorporate the flour, baking powder and starch, mixing from bottom to top.

Then add the carrot puree.

Grease and flour a 20 cm pan (classic or donut) I used a snowflake mould, and pour the mixture, bake in a preheated oven at 180° for about 50 minutes, check the cooking with a toothpick .
