The recipe for olive bread sticks requires a little patience but the final result is really satisfying. These sticks, once baked, they will be crisp on the outside and soft on the inside. It is a tasty alternative to white bread and goes very well with cheese and a nice platter of cold cuts, to accompany a fresh salad or simply accompanied by extra virgin olive oil.


  • 600 ml of warm water
  • 100 g of olive oil
  • 1 Kg of flour
  • 30 g of salt
  • 4 teaspoons of sugar
  • 4 teaspoons of corn starch
  • 2 sachet of breas yeast
  • 500 g pitted green olives


Put the water and oil in a large bowl, add the flour, salt, sugar, yeast and starch and mix the ingredients until you get a well-compact ball of dough.

At this point incorporate the olives, which you can roughly chop them or put them whole, continue to knead the mixture until it is perfectly homogeneous.

You can let the dough rise in the oven that is turned off, covered with a cloth and with the light on. I usually let it rise overnight but if you want to prepare it immediately as soon as you see it reaches the surface of the bowl (usually an hour and a half because it has enough yeast) you can start immediately with the procedures described below.

When the mixture has doubled in volume, place the dough on a floured surface and use a rolling pin to roll out the dough and form a rectangle. Make folds as shown in the photo and put the dough to rest for another hour. Repeat this twice.

After the last operation of the folds and letting it rest for another hour you can take the dough again, form the rectangle with a rolling pin and cut it into strips of different sizes forming slightly flattened sticks.

If you want more swollen sticks, you can let them rise in a warm place for about an hour, covering them with a cloth, otherwise you can place them on the baking tray lined with baking paper and cook them directly in a hot oven at 180 ° C for about 20- 25 minutes, or at least until they are well browned on the surface.

When they are ready, take them out from the oven and let them cool. Serve them accompanied by sauces, cold cuts or whatever you prefer and … BUON APPETITO!
