Banana cake is a soft and tasty dessert to be served accompanied by tea or coffee. It can be an excellent snack for children.

The best time to use bananas in this dessert is when they are ripe so that the dessert will be tastier and more fragrant.

The recipe is really simple to prepare and at the same time a tasty way to don’t waste your fruit!


  • Bananas 370 g
  • Sunflower oil 125 g
  • Self-raising flour 215 g
  • Salt to taste
  • Sugar 200 g
  • Eggs 2
  • Chopped walnuts 60 g
  • Vanilla extract 5 ml


Let’s start first by finely chopping the walnuts and set them aside. Then move on to the preparation of bananas, cut them into slices that are not too thick. Pour the bananas cut into a mixer and blend them to obtain a homogeneous and lump-free pulp. Then keep the mixture aside.

At this point, take the eggs and break them into a bowl and add sugar. With the help of an electric mixer, work them until you get a frothy and light-colored mixture.

You can then add the flour a little at a time in order to avoid the formation of lumps. Add the oil, the salt and the vanilla extract.

Then add the banana mixture that you have previously prepared and continue to mix the ingredients. Finally, pour the finely chopped walnuts.

At this point, grease and flour a 24 cm diameter cake pan. Pour the mixture into the cake tin. Bake in a preheated static oven at 180 ° C for 45 minutes or ventilated at 160 ° C for 35 minutes. You can check if the cake is ready with a toothpick, then take it out and leave it cool to room temperature. Serve the banana walnut cake with a sprinkling of icing sugar to give a more cheerful touch to your cake.
